If you’re looking for a dessert that’s easy to make, looks purdy and tastes absolutely delicious, then this Strawberry Shortbread Parfait is the recipe for you! This classic dessert is a perfect combination of sweet, tangy, and creamy flavours that will satisfy any sweet tooth.


Feeling spring-y.

When spring is in the air, my brain craves two delectable desserts: anything frozen and everything fruity. As with many of my recipes, you have the freedom to mix and match your choice of fruit. Personally, I find the combination of strawberry sauce drizzled over creamy vanilla ice cream irresistible – it’s simply divine.

For those who have an ice cream machine and wish to make the ice cream from scratch, I highly recommend my Vanilla Bean Ice Cream recipe. But if you’re pressed for time, fear not, store-bought ice cream works just as well and is equally delicious. I also opted for store-bought chocolate covered shortbread. Its satisfying crunch complements the parfait’s overall texture to perfection.

Ingredients

Strawberry Sauce

  • 1 pound strawberries cored and sliced
  • cup sugar
  • 1 tbsp corn starch
  • 2 tbsp lemon juice
  • ½ tsp vanilla extract

Parfait

  • vanilla ice cream store-bought or homemade
  • strawberry sauce see above
  • store-bought shortbread cookies or your favourite similar cookie, crumbled

Instructions

  • To make the strawberry sauce, combine the sliced strawberries, sugar, corn starch and lemon juice in a medium saucepan and stir with a spatula until the sugar has coated the strawberries evenly.
  • Cook the mixture over medium heat, stirring often, until the sauce is juicy and thickened, about 10 minutes.
  • Remove the sauce from the heat, transfer to a bowl or container and let cool for 30 minutes in the fridge.
  • Using 4 large glasses, assemble the parfait. Layer some strawberry sauce on the bottom, followed by cookie crumbles and then a scoop of ice cream. Repeat the layers and top with a drizzle of strawberry sauce.
  • Devour immediately.
