Strawberry Sauce
- 1 pound strawberries cored and sliced
- ⅓ cup sugar
- 1 tbsp corn starch
- 2 tbsp lemon juice
- ½ tsp vanilla extract
Parfait
- vanilla ice cream store-bought or homemade
- strawberry sauce see above
- store-bought shortbread cookies or your favourite similar cookie, crumbled
To make the strawberry sauce, combine the sliced strawberries, sugar, corn starch and lemon juice in a medium saucepan and stir with a spatula until the sugar has coated the strawberries evenly.
Cook the mixture over medium heat, stirring often, until the sauce is juicy and thickened, about 10 minutes.
Remove the sauce from the heat, transfer to a bowl or container and let cool for 30 minutes in the fridge.
Using 4 large glasses, assemble the parfait. Layer some strawberry sauce on the bottom, followed by cookie crumbles and then a scoop of ice cream. Repeat the layers and top with a drizzle of strawberry sauce.
Devour immediately.
