Breakfast burritos are the perfect meal prep breakfast food. This recipe makes six burritos so you can eat one and bring the rest to work for the week. The burritos freeze beautifully - just wrap them individually in a piece of paper towel and then saran wrap and place in a freezer bag. To make an even faster morning, I let it thaw in the fridge overnight and then microwave for one minute. You could also add in a mélange of veggies in here or omit any ingredients you like. So versatile.
sriracha or your favourite hot sauceto taste (optional)
5ozcheddar cheeseshredded
6largeflour tortillas
Instructions
Place a large skillet over medium heat.
When hot, add bacon and sauté until bacon is crispy.
Remove bacon from pan and drain on a paper towel lined plate.
Keep the bacon fat in the pan and add the potatoes.
Sauté the potatoes until tender, tossing often, about 15 minutes. Turn heat down to low.
Crack eggs into a large bowl and whisk to break yolks. Add the cooked bacon, parsley, chives, salt, pepper and sriracha to taste into the bowl and whisk to combine.
Add egg mixture to hot skillet with the potatoes.
Using a spatula, continually stir skillet mixture until eggs are cooked through but still have a bit of a wet look to them. Remove from heat.
Lay out the tortillas and put a handful of cheese in the middle of each tortilla, evenly splitting the cheese between the tortillas.
Divide egg mixture between the six tortillas, placing it on top of the little pile of cheese.
Make burritos by folding in the sides over the egg mixture and rolling the front of the tortilla over the mixture away from you.
Enjoy immediately or wrap burrito in a piece of paper towel and then plastic wrap. Store burritos in a freezer bag in the freezer for up to one month (but they won't last that long).
To reheat burrito, let thaw in the fridge overnight or microwave from frozen. Heat in microwave for 1-2 minutes (if thawed) or 4-6 minutes (if frozen), turning halfway. Let cool for a few minutes and enjoy!
