  • 1 tbsp olive oil
  • 1 small sweet or yellow onion finely chopped
  • 1 small shallot finely chopped
  • 1 clove garlic finely chopped
  • 1 cup sour cream
  • cup mayonnaise
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • sea salt and pepper to taste

Instructions

  • Heat a skillet over medium low. When hot, add olive oil.
  • Add onion and a sprinkle of salt and slowly cook, stirring often until onions are starting to caramelize, about 20 minutes.
  • Add shallot and garlic and continue cooking until mixture is nice and golden, about 10 more minutes.
  • Transfer onion mixture to a medium bowl.
  • Add remaining ingredients and stir to combine. Season with salt and pepper to taste.
  • Transfer mixture to a container with a lid and pop in the fridge for at least one hour but several hours is best to really let those flavours mingle and get to know each other.
  • Serve with chips, crackers, veg, or just a spoon into your face.
