Combine soba with a bunch of crunchy, julienned veggies, vibrant herbs and a spicy peanut dressing and you’ve got one heck of a cool summer meal on your hands.
To prep the salad: slice and chop all the veggies, herbs and peanuts and add to a large bowl.
Cook the soba according to package directions.
While the soba is cooking, steal 1/2 cup of the noodle water to use when making the dressing.
Make the dressing: combine the peanut butter, rice vinegar, soy sauce and hoisin sauce in a bowl and break it up with your whisk a bit.
To that mixture, add the chilli oil, garlic and ginger.
Add a few tablespoons of the reserved hot water and whisk. Keep adding hot water until the dressing is the thickness of whipping cream. How much water you add will depend on what type of peanut butter you use. Set aside.
Once the soba is finished cooking, add it to the bowl.
Add the dressing to the bowl and toss until the noodles and veg are coated. You may need a few more tablespoons of hot water to help loosen up the dressing while tossing.
