You know that salty powdery onion soup mix you used to make sour cream and onion dip with Lays Regular chips? Delicious right? I still have a special place in my heart for it. This recipe is like the grown up version of that dip. It’s packed with caramelized onions and garlic which = flavour. You may never buy onion soup mix again.
I love dip. I’ve ranted about it here. I won’t rant about it again but I will say this dip is killer. Serve this at a party and you will not have any leftovers, I assure you. Now, this dip is seriously onion-y. And garick-y. You must like those things in order to truly appreciate this dip. I find that just a bit of garlic and onion powder really punch up the flavour but you can leave it out if you want a more mild version.
Dip for dinner.
Dip dinner is a favourite meal in our home. It’s not just reserved for parties. I like to serve this dip with a bunch of veggies: carrots, broccoli, zucchini, tomatoes, cukes, whatever. Crackers are welcome at the dip dinner. Pickles are invited too. Maybe a few chips if you’re feeling wild.
I love full fat sour cream in this recipe but if you feel like that doesn’t work for you, you can choose a lower fat sour cream or use greek yogurt. It won’t be quite at peak deliciousness but it will still be amazing.
Pro tip: Keep some mints handy for after consumption. You may need them.
Garlicky Sour Cream and Onion Dip
Ingredients
- 1 tbsp olive oil
- 1 small sweet or yellow onion finely chopped
- 1 small shallot finely chopped
- 1 clove garlic finely chopped
- 1 cup sour cream
- ⅓ cup mayonnaise
- ½ tsp garlic powder
- ½ tsp onion powder
- sea salt and pepper to taste
Instructions
- Heat a skillet over medium low. When hot, add olive oil.
- Add onion and a sprinkle of salt and slowly cook, stirring often until onions are starting to caramelize, about 20 minutes.
- Add shallot and garlic and continue cooking until mixture is nice and golden, about 10 more minutes.
- Transfer onion mixture to a medium bowl.
- Add remaining ingredients and stir to combine. Season with salt and pepper to taste.
- Transfer mixture to a container with a lid and pop in the fridge for at least one hour but several hours is best to really let those flavours mingle and get to know each other.
- Serve with chips, crackers, veg, or just a spoon into your face.
